Fabulous leftovers

This is going to be super short but sweet as I’m about to go and search a Christmas present for my mum. I found some amazing things for my dad and sister and I really wish I could show them to you but you never know when they’re reading the blog or not. :)

Yesterday for lunch I had some amazing leftover Italian Veggie Bulgur on a bed of spinach with some hummus and a microwaved egg. I was surprised at how good it was!

By the way, I bought two bags of spinach so expect to see it often. :)

 

After work I went to the best yoga session in a long time. I wonder why I sometimes prefer doing yoga on my own when classes are so amazing. My teacher Celine is amazing and full of knowledge, it’s fantastic to be her student. I was in complete bliss when I left the room and headed back home.

Dinner was stellar as well. Whenever I cook brown rice I always make sure to cook a huge amount so I could freeze it. It’s so easy to whip up a great rice dish when you don’t have to spend ages cooking the rice first.

I was in the mood for something quick and healthy so I made some stir fry. First I sautéed the onion and carrot, added some tofu and let it cook for a  few minutes.

Afterwards I added some spinach and frozen rice and mixed in some honey & garlic teriyaki sauce. I can’t remember if I’ve ever cooked with teriyaki sauce before as I always thought that it wasn’t vegetarian! Glad that I was mistaken :)

For breakfast today I really wanted to make some pancakes as it’s been ages since I last had some. I’ll post the recipe tomorrow btw. :)

I topped them with peanut butter, maple syrup and apple. Scrumptious!

Pump was good but our run got cancelled because my sister fell asleep again and awoke when I got back home.

i just had some leftover Thai-riffic Spinach Curry Noodles that got a bit mushy though. However, they were still edible :)

Question: Do you like leftovers?
Sure as hell I do. The freezer is my best friend.

    I love leftovers! I used to never have them because my boyfriend lived a block away so he was always over and ate a ton (which isn’t a bad thing). So when I moved across the country I had to get used to making normal portions again or having a ton of leftovers!

  3. Leftovers and I are BFFs. I eat so many leftovers because I can’t throw away food to save my life. And yes, freezer=amazing for our relationship :)

    The pictures of your stirfry are incredible. I can never get a decent shot on the stove due to all that steam, nice work! Looks like your eating awesome food lately, I am jealous since we have been out of groceries and feeling lazy around here. I guess it’s because we’re heading home in a few days and don’t want to do too much cooking to produce left overs. By the way I LOVE LEFT OVERS (normally when I am here to eat them). They are my favorite thing to eat for lunch by far.
