Chocolate and More Pumpkin

Having the day off is absolutely glorious. I got so much done already… Gyrokinesis class, meeting, lunch, going to the post office, paying bills. You know, all the fun stuff :) .

I decided to make Averie’s Raw Vegan Chocolate Mousse because I have been drooling over her creations for ages and had two ripe avocados on hand.

So in the food processor went: 2 avocados, 1/4 cup cacao powder, 1/2 cup agave. Could it be any simpler? It took me exactly 5 minutes.

I love the tiny hint of avocado in that mousse! You’d actually think that avocado or chocolate wouldn’t fit together but you’re wrong!!

Of course I had to try some after lunch and it was absolutely to die for. Thanks Averie!

 

Speaking of lunch… I swear I don’t eat that much white pasta.. It’s just been quite a coincidence lately and my camera’s always around, snapping pictures! I had to buy these beauties because they’re filled with pumpkin. You know, they’re in season.. Because it’s autumn, Not winter (go away you stupid Christmas decoration!!).

Drizzled with olive oil and topped with pumpkin seeds and pepper.

The salad that went with it wasn’t a huge stunner (iceberg lettuce and tomatoes) but was fabulous nevertheless.

Oh wait.. Is that the time? I need to hurry and pack my stuff for spin class.

    Mmm…I have seen that avocado pudding on here but have yet to try it. I guess I kind of fear eating that much avocado but maybe it’s so rich that I wouldn’t eat the whole batch? At least it’s all really nutritious ingredients. :)

      Oh no, I couldn’t eat the entire batch either because it’s quite rich. However, I had about 2 tablespoons which was perfectly satisfying. The rest went back to the freezer. :)
